Nikki's Recipe Book: Classic Cookies

Happy Sunday!

What have you been up to? After a couple of Breaking Bad episodes and admiring the pretty blue sky, I decided to do a spot of baking. 

Today's creation? Cookies! I thought I'd share my recipe, which I've been using for years and years. These classic tasty treats are super simple, impossible to mess up, and I swear, they will be the best cookies you've ever tasted. 

Assuming you like sweet, warm, chocolatey cookies that are perfectly crispy on the outside and all soft and gooey on the inside...

Drooling? Me too. 


125g softened butter
100g light brown Muscovado sugar
125g caster sugar
1 egg, lightly beaten
1 tsp vanilla extract
225g self raising flour
Half a tsp salt
200g chocolate chips/chunks (I like to use 100g white, 100g milk chocolate). 


Preheat your oven to 180c/gas mark 4 

1. Cream together the butter and sugars. Then add your egg and vanilla extract

2. Sift the flour and salt and add it to your butter-sugar-egg mixture. Stir until your arms feel like falling off 

3. Throw in your chocolate chips and stir again to make sure they're mixed in evenly 

4. Roll your dough into small flattened balls and place onto ungreased baking paper 

5. Leave to bake for 7-10 minutes, depending on how gooey you like your cookies. For me, 8 is perfect. They look a little undercooked when you remove them, but trust me - they're done! 

6. Leave your cookies for five minutes before transferring them to a cooling rack (keep them on their baking paper, or they might fall through!). I actually sometimes skip this step and throw them straight on the plate. I won't tell if you won't. 

And that's it - the most delicious cookies ever! Easy, right? I'll be grabbing a couple of these before settling down to some more BB episodes. Heaven! Have a lovely Sunday evening. xx

  3. these look so delicious! i'm so used to eating chocolate chips rather than chunks and now this makes me want to eat chocolate chunk cookies :P
    wish i could make these asap! sadly my small uni dorm has no stove :(
    but i'll definitely treat myself to making these when i come back home for the summer!
